Quick Guacamole

(I'm linking this one up to Picnic Recipes over at Life As Mom  and grilling recipes over at Kelly's Korner so go find some fun new recipes!)

I have played around with several different guacamole recipes and all in all, this easy one is my favorite so far.
You can double or triple it if your crowd requires more, but keep in mind it is the best when made right before-- as it does tend to turn brown-- even if you add lemon juice.

One Ripe Avocado (Ripe avocados should be soft to the touch but not mushy. If you really want to know what it looks like inside, pop off the little stem stub at the top and voila' -- you have a little window into your avocado!)
One Lime
One clove of garlic, minced (If you do not have fresh, use garlic powder-- try not to use bottled garlic)
3 TBS. of Sour Cream
Salt and Pepper to taste

Mash avocado in a small to medium size bowl. Add the garlic. Add juice from both halves of the lime. Add the Sour Cream and stir to combine. Taste Guac and add salt and pepper as needed. Enjoy with your tortilla chips of choice! (In our house, we LOVE Santitas chips. They taste authentic, they just have a few ingredients AND the price is right at under $2.00 for a big bag!)

In a pinch, I have used bottle lime juice and garlic powder-- and if your avocado is ripe-- it really will not matter too much.

  1. My husband has been making guacamole for years. Our family loves it when he comes home with avocados.
